Rosemary Garlic Cornish Hens

Thinking of something to make for Easter dinner, I came across this recipe for cornish hens. It seemed refreshing and spring time-y enough. Rosemary Garlic Cornish Hens Recipe Source: Unknown Ingredients: 3 cornish hens 8 cloves garlic 6-8 springs of fresh rosemary 3 tablespoons extra-virgin olive oil 1 lemon, quartered salt pepper 1/2 cup white wine or chicken broth Directions: Preheat oven to 400 degrees F. Arrange the hens in a baking dish. Rub hens with salt, pepper, and olive oil. Stuff each hen with 1 quarter of lemon and 2-3 springs of rosemary. Add wine/chicken broth to pan, pouring over chicken. Add the cloves of garlic. Squeeze lemon juice from remaining lemon quarter over chicken. Roast hens in the oven for about 90 minutes or until the thickest part reads 175 F on a meat thermometer. Garnish with rosemary and lemon slices (I used orange slices because I had some of those leftover from the mock mimosas).
