Mock Mimosa

I made these mimosas at Easter to go along with Easter dinner. Being a Mormon, it was nice to find a non-alcoholic beverage to enjoy. It was very refreshing and "fancy".

Ingredients:
1 tub Crystal Light Pineapple Orange Flavor Drink Mix
1 bottle (2 liter) club soda, chilled
2 cups cold orange juice
1 seedless orange, cut into slices

Directions:
Empty contents of drink mix tub into large pitcher. Add club soda; stir until drink mix is completed dissolved. Stir in orange juice. Serve over ice cubes. Add orange slice to each glass.

Local Style Fried Rice

One of the best things about growing up in Hawaii is the variety of food. One of my favorites is fried rice, and there are so many variations of it. It is probably one of the best dishes to experiment with. Living on the east coast, I don't have access to some of my favorite meats for fried rice (Portuguese sausage, char siu pork, etc.) so it is hard to make exactly the flavor of fried rice I want. However, I think I finally came close! Local Style Fried Rice Recipe Source: Original Creation by Jenny Ingredients: 2-3 cups bacon, chopped 1 Hillshire Farm Polska Kielbasa 3 cups of rice (white or brown) oyster sauce 1 pkg. frozen peas and carrots chopped green onion Directions: Fry bacon until cooked. Add sausage (precooked) towards the end. Leave the bacon grease in the pan (I seldom ever do this... but trust me). Add 3 cups of precooked rice. Mix well in the frying pan. Spätzle (Spaetzle)

As I mentioned in my previous post, my husband made an Austrian dinner for his father's 60th birthday. Along with his grandmother's Austrian Goulash , he also made Spaetzle. Before we get too far into this, you might be wondering, "What is spaetzle ?". Well, spaetzle is a type of egg noodle of soft texture found in the cuisine of Austria, Germany, Switzerland, and Hungary. I also mentioned that my husband's paternal grandmother (Luise Kathrein Sparrow) came from the Tyrol area of Austria. Spaetzle is another one of the dishes she made often for her family. She topped it with butter and cheese and so that is how my husband makes it. However, I have seen other toppings such as crumbled bacon, onions, parsley, etc. I love it when my husband makes this dish because (1) I get to sit back and do nothing in the kitchen for a change, and (2) He begins talking about his grandmother.
